These tenderloins are the perfect size for schnitzel rolls and wraps, and a firm favourite with the kids. All made by hand with Japanese Panko breadcrumbs, they give a super crunchy-crispy finish to the chicken.

Inspiration: In a non-stick pan, with enough canola oil for shallow frying. On a medium to high heat test the oil with a few bread crumbs to see if it sizzles straight away. Cook the chicken for 3-4 mins on each side or until golden and cooked through. Allow to sit on some paper towel to drain. Season well, and serve with a wedge of lemon for some freshness.
