We have removed the backbone of this whole chicken, and used our homemade Mediterranean Meat Rub, of fennel, rosemary, and oregano, to deeply penetrate the skin and flesh of this super juicy bird.

Inspiration: When cooked the skin has exceptional herbaceous flavour notes and the flesh a subtly fragrant sweetness to it. A butterflied chicken makes ideal BBQ material, or you could put it face down in a hot pan to crisp up the skin (5-8 mins) and finish in an oven at 180'C (about an 1 hr). Take your pick. 

Provenance: We partner with leading Victorian producers to supply our locally raised RSPCA Approved and free-range chicken.
